Ingredients
The following ingredients have 4 Servings
- 1/2 cup Butter ((1 stick) unsalted, room temperature)
- 1/2 cup Brown sugar
- 1 Egg (large)
- 1 1/2 cup All-purpose flour
- 2 tbsp Cornflour
- 1/4 tsp Baking powder
- 1/4 tsp Salt
- 1/2 tsp Cinnamon sugar
- 1/4 tsp Ginger (ground)
- 1 tsp Vanilla
- 1/2 cup Sugar
- 2 tsp Cinnamon
Instruction
- Combine together flour, cornflour, baking powder, salt, cinnamon, and ground ginger.
- Cream together butter and brown sugar until light and fluffy.
- Add vanilla, and egg – combine well.
- Next, add the flour mixture – combine well but do not over mix.
- Cover the dough and let chill in the fridge for an hour or until firm.
- Preheat the oven at 170 C / 340 F.
- Combine brown sugar and cinnamon for coating in a bowl.
- Take a small golf size amount of dough and roll into a ball.
- Coat in the cinnamon sugar.
- Then, place on a baking tray.
- Bake in the preheated oven for 10 to 12 minutes or until the edges are lightly golden.
- When baked, remove to a cooling rack to cool completely.
- Once cooled, transfer to an airtight cookie jar.
- These cookies will keep for up to 2 weeks.
