Ingredients

The following ingredients have 4 Servings
  • 1/2 cup Butter ((1 stick) unsalted, room temperature)
  • 1/2 cup Brown sugar
  • 1 Egg (large)
  • 1 1/2 cup All-purpose flour
  • 2 tbsp Cornflour
  • 1/4 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 tsp Cinnamon sugar
  • 1/4 tsp Ginger (ground)
  • 1 tsp Vanilla
  • 1/2 cup Sugar
  • 2 tsp Cinnamon

Instruction

  • Combine together flour, cornflour, baking powder, salt, cinnamon, and ground ginger.
  • Cream together butter and brown sugar until light and fluffy.
  • Add vanilla, and egg – combine well.
  • Next, add the flour mixture – combine well but do not over mix.
  • Cover the dough and let chill in the fridge for an hour or until firm.
  • Preheat the oven at 170 C / 340 F.
  • Combine brown sugar and cinnamon for coating in a bowl.
  • Take a small golf size amount of dough and roll into a ball.
  • Coat in the cinnamon sugar.
  • Then, place on a baking tray.
  • Bake in the preheated oven for 10 to 12 minutes or until the edges are lightly golden.
  • When baked, remove to a cooling rack to cool completely.
  • Once cooled, transfer to an airtight cookie jar.
  • These cookies will keep for up to 2 weeks.
