Ingredients

The following ingredients have 4 Servings
  • 1/2 cup applesauce, unsweetened
  • 1/2 cup Greek yogurt, plain
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup sugar
  • 1 cup flour, whole wheat
  • 1 cup flour, all-purpose
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cup peaches, sliced (fresh or frozen )

Instruction

  • Preheat oven to 350°F. Place paper liners into muffin tin, or grease muffin tin well. Set frozen peaches out to thaw if using frozen.
  • Mix together applesauce, yogurt, egg, vanilla, and sugar until creamy.
  • Add flours, baking soda, cinnamon, and salt to the sugar mixture and stir until combined.
  • Chop peaches into bite-sized pieces and fold into batter.
  • Distribute batter evenly among paper liners. Sprinkle with coarse sugar, if desired.
  • Bake for 15-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
