Ingredients
The following ingredients have 4 Servings
- 3/4 cup Unsweetened Applesauce
- 1 egg yolk only (save the white for later)
- 2 tbsp honey
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 2 cups whole wheat flour
- Coating for cookies
- 1 egg white
- 1/4 tsp cinnamon
Instruction
- Mix the applesauce, egg yolk, honey, cinnamon and vanilla extract.
- Add in the flour and mix until well combined.
- The dough will be a bit sticky so roll it out onto a well floured surface and cut out what ever shapes you want for the cookies, making the dough about 1/8 inch thick.
- Place all cut shapes onto parchment paper or non stick pan.
- Re-roll the dough until all the dough is used up.
- Mix the egg white and the 1/4 tsp of cinnamon very well in a separate small bowl.
- Brush the tops of each cookie with the egg white mixture before baking.
- Bake in the oven at 350 degrees for 20 minutes. They are done when the tops start to lightly brown. Let cool and dry for 1 to 2 hours for crunchy cookies.
