Ingredients

The following ingredients have 8 Servings
  • 125g butter chopped softened
  • 3/4 cup caster sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup plain flour sifted
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 1/2 tbs almond meal
  • 1/2 cup milk
  • 2 pears chopped cored peeled
  • 1/2 cup plain flour
  • 1 1/2 tbs brown sugar
  • 1/4 tsp baking powder
  • 60g butter chopped softened

Instruction

  • Preheat oven to 160C.
  • Beat butter, sugar and vanilla with electric mixer until pale and creamy.
  • Gradually add the eggs and beat well.
  • Add the flour, baking powder, cinnamon and almond meal, and beat to combine.
  • Fold through the milk and pears.
  • To make the topping, combine flour, sugar and baking powder in a bowl.
  • Add the butter rub it into the flour mixture with fingertips.
  • Line the base of a lightly greased round spring-form cake tin with baking paper.
  • Spoon in cake mixture and top with crumble.
  • Bake for 1 hour and 10 minutes or until cooked when tested with a skewer.
  • Allow to cool in the tin.
