Ingredients

The following ingredients have 6 Servings
  • 8 oz. orzo pasta
  • 2 limes (juiced)
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 bunch cilantro (chopped)
  • 1 bunch green onions (sliced)
  • 1 red bell pepper (seeded and diced)
  • 1 pint grape or cherry tomatoes (halved)
  • salt and pepper (to taste)

Instruction

  • Cook orzo according to package directions. Rinse with cold water and set aside.
  • Make the dressing in a small bowl by whisking together lime juice, olive oil, onion powder, garlic powder, and salt. Stir in cilantro and pour over cooked orzo.
  • Toss pasta with green onions, bell pepper, and tomatoes. Season with salt and pepper to taste. Refrigerate until chilled and/or ready to serve.
