Ingredients
The following ingredients have 6 Servings
- 8 oz. orzo pasta
- 2 limes (juiced)
- 1/4 cup extra virgin olive oil
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 bunch cilantro (chopped)
- 1 bunch green onions (sliced)
- 1 red bell pepper (seeded and diced)
- 1 pint grape or cherry tomatoes (halved)
- salt and pepper (to taste)
Instruction
- Cook orzo according to package directions. Rinse with cold water and set aside.
- Make the dressing in a small bowl by whisking together lime juice, olive oil, onion powder, garlic powder, and salt. Stir in cilantro and pour over cooked orzo.
- Toss pasta with green onions, bell pepper, and tomatoes. Season with salt and pepper to taste. Refrigerate until chilled and/or ready to serve.
