Ingredients

The following ingredients have 8 Servings
  • 3 to 4 lb. pork shoulder
  • 3/4 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 2 tbsp. orange zest
  • 1 cup cilantro (finely chopped)
  • 1/4 cup mint leaves (minced)
  • 8 garlic cloves (minced)
  • 1 tsp. dried oregano
  • 2 tsp. ground cumin
  • 1 cup olive oil
  • Sea salt and freshly ground black pepper

Instruction

  • In a bowl, combine the orange juice, lime juice, orange zest, cilantro, mint, garlic, oregano, cumin, and olive oil, and season to taste.
  • Place the pork shoulder in the cilantro-lime marinade, and marinate for 4 to 12 hours.
  • Preheat oven to 375 F.
  • Brown the meat in a skillet over high heat on all sides, 3 to 4 minutes per side.
  • Roast the shoulder in the oven for 2 to 3 hours or until the meat reaches a temperature of 160 F.
  • Let the meat rest for 15 to 20 minutes.
  • Slice the pork shoulder against the grain.
