Ingredients
The following ingredients have 8 Servings
- 3 to 4 lb. pork shoulder
- 3/4 cup fresh orange juice
- 1/2 cup fresh lime juice
- 2 tbsp. orange zest
- 1 cup cilantro (finely chopped)
- 1/4 cup mint leaves (minced)
- 8 garlic cloves (minced)
- 1 tsp. dried oregano
- 2 tsp. ground cumin
- 1 cup olive oil
- Sea salt and freshly ground black pepper
Instruction
- In a bowl, combine the orange juice, lime juice, orange zest, cilantro, mint, garlic, oregano, cumin, and olive oil, and season to taste.
- Place the pork shoulder in the cilantro-lime marinade, and marinate for 4 to 12 hours.
- Preheat oven to 375 F.
- Brown the meat in a skillet over high heat on all sides, 3 to 4 minutes per side.
- Roast the shoulder in the oven for 2 to 3 hours or until the meat reaches a temperature of 160 F.
- Let the meat rest for 15 to 20 minutes.
- Slice the pork shoulder against the grain.
