Ingredients

The following ingredients have 4 Servings
  • 1/4 cup olive oil
  • 1/4 cup lime juice (from about 2 limes)
  • 1/4 cup cilantro (fresh, chopped)
  • 4 cloves garlic (minced)
  • 1/2 teaspoon cumin (ground)
  • 1/2 teaspoon red chili flakes (or to taste)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (ground)
  • 4 chicken breasts (boneless and skinless, boneless and skinless thighs can be used as well)
  • 1 tablespoon olive oil

Instruction

  • Combine the olive oil, lime juice, cilantro, minced garlic, cumin, chili flakes, salt and pepper in a large bowl. Add chicken and toss to coat. Let marinate in fridge 30 minutes and up to 2 hours. 
  • Heat a skillet over medium-high heat with the olive oil. Remove the chicken from the fridge and place in the skillet.
  • Cook the chicken until well-browned on both sides and cooked through, about 4-6 minutes per side, or until the chicken reaches 165 degrees F internal temperature.
  • Allow to rest for 5 minutes before slicing and serving.
