Ingredients
The following ingredients have 4 Servings
- 1/4 cup olive oil
- 1/4 cup lime juice (from about 2 limes)
- 1/4 cup cilantro (fresh, chopped)
- 4 cloves garlic (minced)
- 1/2 teaspoon cumin (ground)
- 1/2 teaspoon red chili flakes (or to taste)
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon pepper (ground)
- 4 chicken breasts (boneless and skinless, boneless and skinless thighs can be used as well)
- 1 tablespoon olive oil
Instruction
- Combine the olive oil, lime juice, cilantro, minced garlic, cumin, chili flakes, salt and pepper in a large bowl. Add chicken and toss to coat. Let marinate in fridge 30 minutes and up to 2 hours.
- Heat a skillet over medium-high heat with the olive oil. Remove the chicken from the fridge and place in the skillet.
- Cook the chicken until well-browned on both sides and cooked through, about 4-6 minutes per side, or until the chicken reaches 165 degrees F internal temperature.
- Allow to rest for 5 minutes before slicing and serving.
