Ingredients

The following ingredients have 4 Servings
  • 0.25 cup butter
  • 1 onion (chopped)
  • 2 cloves garlic cloves (finely chopped)
  • 18 ozs Mushrooms (chopped)
  • 2 Tbsps flour
  • salt
  • peppers
  • 4 cups vegetable stock
  • 0.875 cup dry white wine
  • 0.333 cup dry sherry
  • flat-leaf parsley

Instruction

  • Heat the butter in a large pan, add the onion and garlic and cook gently until soft, but not browned.
  • Add the mushrooms and and sprinkle with the flour. Cook until soft and season with salt and pepper to taste.
  • Stir in the stock and wine and bring to a boil. Cover and simmer for 10 minutes. Stir in the sherry and serve immediately garnished with parsley.
