Ingredients

The following ingredients have 6 Servings
  • 1 bunch kale (destemmed)
  • 10-12 small cooked beets (scooped with melon baller)
  • 5-6 cherry tomatoes (halved)
  • 5-10 sliced red onions (thinly sliced)
  • 2 ounces goat cheese (crumbled)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 garlic clove (grated)
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Instruction

  • In a large bowl, combine the ingredients of the dressing together. Add the kale on top of the dressing and use your hands to massage the kale until it's well coated with the dressing and it softens.
  • Transfer the kale to a large circular wooden platter and place in a circular shape around the plate. Scatter the beets, tomatoes, red onions and goat cheese evenly around the circular shape. Serve immediately or chill for up to 6 hours.
