Ingredients
The following ingredients have 4 Servings
- 70 g unsweetened almond butter
- 40 g coconut oil (melted)
- 80 g almond flour
- 4 TB Swerve® sweetener (confectioners)
- 1/2 tsp ground cinnamon
- 3 TB desiccated coconut
Instruction
- Combine the almond butter (which is easier to work with if at room temperature and excess oil drained off) with the melted coconut oil. Whisk well to combine.
- Ina separate bowl, combine the almond flour, sweetener and ground cinnamon. Pour the melted wet mixture into the the bowl and mix until evenly combined. The mixture needs to firm up so that you can form small balls from it. Place the bowl in the fridge for at least 30 minutes.
- After 30 minutes, form 10 small balls from the mixture, but work quickly as the warmth in your hands will make it tricky. If it is easier, create 10 portions and return to the fridge to firm up again before attempting to gentle roll them in the palm of your hands into balls.
- Roll the balls in the desiccated coconut and keep the snow bombs in the fridge for a quick Christmas snack!
