  • 16 oz spicy ground chorizo
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 16 oz ground beef
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • slider buns
  • tomatoes (sliced)
  • cherry tomatoes (sliced)
  • avocado (sliced)
  • red onion (sliced thin)
  • caramelized onions
  • arugula
  • iceberg lettuce
  • American cheese (slices)
  • pepperjack cheese (slices)
  • Colby jack cheese (slices)
  • bread & butter pickles (sliced)
  • Carolina BBQ sauce
  • ketchup
  • mustard
  • mayonnaise

Instruction

  • If making caramelized onions for a topping, finely slice a sweet onion then add to a skillet over medium low heat with a tablespoon of butter. Saute the onions, stirring occasionally, while preparing the other toppings. Wash and chop the other toppings as necessary.
  • In a small bowl, season the chorizo with salt and pepper and mix well. Form small patties - just slightly larger than the size of the bottom bun and about a half inch thick. Set aside until ready to cook.
  • In a separate bowl, season the ground beef with salt and pepper and mix well. Again, form patties just larger than the size of the bottom bun. The meat will shrink as it cooks.
  • Using either an outdoor grill or flattop grill, cook the chorizo burgers until well-done or no longer pink in the center, about 3-4 minutes per side. Cook the beef burgers to your desired doneness - I recommend medium rare, about 2-3 minutes per side.
  • Arrange the toppings in order from buns to cheese to sauces to other toppings and let your guests 'chorizo' their own burgers. Enjoy!
