Ingredients
The following ingredients have 4 Servings
- beef or vegetarian chorizo
- 2 15 oz. cans of black beans (, drained and rinsed)
- 3 cups vegetable broth
- 2 bell peppers (diced (about 1 1/2 cups/375 mL))
- 1/2 large onion (pureed (about 1/2 cup/125 mL))
- 2 tsp. minced garlic (about 4 cloves)
- 1 bay leaf
- 1/4 tsp. red pepper flakes
- 2 tsp. cumin
- 2 tsp. oregano
- 2 tsp. chili powder
- 1 tsp. salt
- 2 tsp. olive oil
- 1/4 cup 60 mL cilantro, minced, for garnish
- 2 limes (cut into wedges, for garnish)
Instruction
- In a large bowl; combine chorizo, and broth. Mix well.
- Dice bell peppers, puree onions, mince garlic, and add to bowl along with bay leaf, red pepper flakes, cumin, oregano, chili powder, salt, and olive oil. Mix well.
