Ingredients

The following ingredients have 4 Servings
  • 6 large tomatoes
  • 0.5 cup olive oil
  • 1.667 cups Chorizo (cooking)
  • 1 large onion (chopped)
  • 1 clove garlic cloves
  • 2 stalks thyme

Instruction

  • Bring a pan of salted water to a boil and drop in the tomatoes for 30 seconds. Remove from the water, peel and slice. Set aside.
  • Heat 4 tbsp oil in a wide pan and fry the chorizo slices for about 5 minutes, turning once. Set aside.
  • Heat the remaining oil in the pan and gently cook the onion until soft. Add the garlic, cook for 2 minutes then add the tomatoes.
  • Cover the pan and simmer for 8 minutes, adding a little water if necessary.
  • Add the chorizo and the thyme sprigs and cook for a further 3 minutes. Season with salt and pepper and serve.
