Ingredients
The following ingredients have 4 Servings
- 4 – Minute® Ready to Serve Brown & Wild Rice cups
- 6 ounces Mexican-style pork chorizo
- 1/3 cup canned whole kernel corn, strained
- 1/3 cup canned black beans, strained
- crumbled cotija cheese (optional)
- fresh cilantro, chopped (optional)
Instruction
- Remove chorizo from casing and cook on stovetop on a medium high heat for 5 minutes. Mince well.
- Add the strained corn and black beans. Mix in with chorizo and let cook for another 2 minutes.
- As the chorizo is cooking on the stovetop, heat up the Minute® Ready to Serve Brown & Wild Rice cups in the microwave two at a time with tops removed for 90 seconds. Repeat for the other two cups.
- Place the cooked chorizo mixture in a mixing bowl with the Minute® Ready to Serve Brown & Wild Rice. Mix together.
- Serve and top with some crumbled cotija cheese and fresh cilantro.
