  • 200 g plain flour
  • 60 g pure icing sugar
  • 120 g cold butter (coarsely chopped)
  • pinch of salt
  • 1 tbs iced water
  • 1 egg yolk
  • 1 beaten egg
  • 330 ml pouring cream
  • 30 ml Pedro Ximénez sherry
  • 250 g 70% Lindt chocolate (finely chopped)
