Ingredients

  • 3 ounces semi sweet chocolate (chopped)
  • 1 tablespoon salted butter
  • 1 large egg (separated)
  • ¼ teaspoon cream of tartar
  • 3 tablespoons sugar (divided)
  • ¼ cup heavy cream (cold)
  • ¼ teaspoon vanilla extract

Instruction

  • Place the chocolate and butter in a heatproof bowl and place over a saucepan containing 1-inch of simmering water.  Stir until the chocolate is melted and smooth.
  • Remove the bowl from the heat and let cool.  Whisk the egg yolk into the chocolate and mix until smooth.  Set aside.
  • In another bowl, beat the egg white until foamy.  Add the cream of tartar and beat until soft peaks form.  Slowly add in 2 tablespoons of the sugar and continue beating until stiff peaks form.
  • In another bowl, beat the heavy cream until it begins to thicken.  Add the remaining 1 tablespoon of sugar and the vanilla and continue beating until soft peaks form.
  • Now it's time to assemble the mousse.  Very gently fold in the egg whites into the chocolate mixture.
  • Next, fold in the whipped cream.
  • Transfer the mousse to a dessert dish, cover and chill for several hours.
  • Top with extra whipped cream, if desired
