- 3 ounces semi sweet chocolate (chopped)
- 1 tablespoon salted butter
- 1 large egg (separated)
- ¼ teaspoon cream of tartar
- 3 tablespoons sugar (divided)
- ¼ cup heavy cream (cold)
- ¼ teaspoon vanilla extract
Instruction
- Place the chocolate and butter in a heatproof bowl and place over a saucepan containing 1-inch of simmering water. Stir until the chocolate is melted and smooth.
- Remove the bowl from the heat and let cool. Whisk the egg yolk into the chocolate and mix until smooth. Set aside.
- In another bowl, beat the egg white until foamy. Add the cream of tartar and beat until soft peaks form. Slowly add in 2 tablespoons of the sugar and continue beating until stiff peaks form.
- In another bowl, beat the heavy cream until it begins to thicken. Add the remaining 1 tablespoon of sugar and the vanilla and continue beating until soft peaks form.
- Now it's time to assemble the mousse. Very gently fold in the egg whites into the chocolate mixture.
- Next, fold in the whipped cream.
- Transfer the mousse to a dessert dish, cover and chill for several hours.
- Top with extra whipped cream, if desired
