Ingredients

The following ingredients have 4 Servings
  • 1 cup plain flour ((all purpose flour))
  • 1 1/2 tsp baking powder
  • 1 tbsp cocoa powder
  • 2 eggs
  • 3 tbsp mascarpone
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 2 tbsp sugar
  • oil or butter to fry

Instruction

  • In a bowl, sift the flour, add the baking powder and cocoa powder.
  • Beat the eggs well with a pinch of salt until fluffy.
  • Add the mascarpone and use a hand blender to blend everything well until smooth.
  • Pour it over the flour mixture, add the sugar, milk and vanilla extract, then use again the blender to get a smooth batter.
  • Heat up a non-stick frying pan, add a drop of oil or butter, add a ladleful of batter, then cook on both sides for 1-2 minutes until fluffy.
  • Repeat with the remaining batter.
  • Serve the pancakes with chocolate sauce and fresh fruit.
