Ingredients

The following ingredients have 4 Servings
  • All purpose flour 1/4 cup
  • Cocoa Powder 1/4 cup
  • Milk powder 1 tbsp
  • Milk 1/4 cup
  • Egg 1
  • Sugar 2 tbsp
  • Vanilla essence 1/2 tsp
  • Baking soda 1/4 tsp
  • Ghee for shallow frying
  • Almond flakes 2 tbsp
  • For the sugar syrup
  • Sugar 1/4 cup
  • Water 1/4 cup
  • For Orange Caramel Sauce:
  • Fresh Orange Juice 1/2 cup
  • Orange zest 1/2 tsp
  • Sugar 2/3 cup
  • Water 1/4 cup

Instruction

  • Prepare the sugar syrup by dissolving the sugar in water and letting it to boil. When it boils, switch the flame off and allow to cool completely.
  • In a bowl, mix together all purpose flour, cocoa powder, milk powder, sugar and baking soda.
  • To this mixture, whisk in the egg, vanilla essence and milk.
  • Whisk thoroughly to form a smooth batter without any lumps.
  • Heat ghee in a pan to shallow fry the malpuas.
  • Pour in a scoop of the batter to form a small circle, of size as you wish.
  • Once one side is done, flip it over to cook the other side too.
  • Once done, drain excess ghee, if any by using paper towels. Allow to cool.
  • For making the orange caramel, mix water and sugar in a heavy bottomed pan.
  • In low flame, keep stirring until all the sugar is dissolved.
  • Once sugar is dissolved, turn the flame to high and let it boil, without stirring.
  • Once in a while, swirl the pan. The syrup turns to amber color in almost 8 minutes or so. Keep waiting and swirling, do not stir.
  • Once it changes the color, lower the flame, and carefully add the orange juice and orange zest, little by little. The solution will bubble vigorously.
  • Keep stirring until the solution becomes smooth and any crystals formed melt.
  • Allow the solution to cool completely.
  • Now soak the malpuas in sugar syrup for 1-2 minutes. And pour the orange caramel just before serving.
  • Garnish with chopped almonds or pistachios.
  • Chocolate malpuas taste best when chilled!! Do try them..:)
