Ingredients

The following ingredients have 4 Servings
  • 1 cup granulated sugar
  • 1 large egg
  • 1/2 cup canola oil
  • 2 tablespoons milk
  • 1 - (15-ounce) can pure canned pumpkin
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • cooking spray

Instruction

  • Preheat oven to 350 degrees F.
  • In large bowl, whisk together the sugar, egg, oil, milk and pumpkin until well blended.
  • In a separate smaller bowl, combine the flour baking soda and salt. Add it to the liquid mixture and mix together with a spoon; then fold in the chocolate chips.
  • Line a standard size muffin tin with cupcake liners and fill each cup three-quarters of the way to the top or you can grease it with cooking spray.
  • Bake for 15-18 minutes until the top springs back when touched. Remove from oven and let cool.
