Ingredients
The following ingredients have 4 Servings
- 3/4 cup almond flour
- 1 tsp baking soda
- 2 pk Vital Proteins Collagen Peptides*
- 6 tbsp unsalted butter, (softened)
- 1 cup creamy peanut butter
- 1/2 cup coconut sugar
- 1 large egg, (room temperature)
- 1 tsp vanilla extract
- 2/3 cup dark chocolate chips
- 1 pinch sea salt flakes
Instruction
- Pre-heat oven to 375F degrees. Spray two large cookie sheets with coconut oil and set aside.
- In a medium bowl add almond flour, baking soda and Vital Proteins Collagen Peptides. Whisk to combine
- In a large bowl combine the butter, peanut butter, coconut sugar, egg and vanilla extract. Whisk vigorously until the mixture is smooth
- Pour half of the flour into the peanut butter bowl and fold. Add remaining flour and chocolate chips, fold until uniform but don’t overwork it.
- Scoop a small amount of the chocolate chip peanut butter dough to form into a round shape and start adding it to the cookie sheet, leaving enough room for the cookie dough balls to melt into a cookie shape. Proceed until all the dough has been used.
- Bake at 375F degrees, top rack of the oven for about 8-9 minutes. Remove from oven, sprinkle cookies with sea salt flakes. Allow the cookies to cool off completely before storing
