Ingredients
The following ingredients have 4 Servings
- 1/2 cup almond butter (*using a fresh jar of drippy butter is recommended)
- 1/2 cup maple syrup
- 1 tsp vanilla
- 1/2 cup unsweetened shredded coconut
- 1 1/2 cups vanilla protein powder
- 1/4 cup dark chocolate chips
Instruction
- In a medium mixing bowl, stir together the almond butter, maple syrup, and vanilla. Then stir in the coconut.
- Next add in the protein powder, 1/4 cup at a time, stirring well each time. Fold in the chocolate chips. Pop the bowl into the fridge for 10-15 minutes to chill a bit. This will make it easier to roll into balls.
- Line a cookie sheet with parchment paper.
- Using a small cookie scoop, scoop heaping tablespoon-sized balls onto the parchment-lined baking sheet. Dip the scoop into water between scoops if it starts to stick. Roll the balls in your palms to smooth them.
- Chill in the freezer for 15-20 minutes then store in a sealed container in the fridge or freezer for up to a week.
