Ingredients

The following ingredients have 9 Servings
  • 1 cup cashews (soaked for at least 4 hours (or overnight), drained, rinsed and dried gently with paper towel)
  • 2 Tbsp pure maple syrup
  • 2-3 tsp fresh lemon juice (depending on flavor preference)
  • 1 Tbsp organic coconut oil (refined (it's flavorless), solid (soft is okay))
  • 1/8 tsp fine grain sea salt
  • 1 tsp pure vanilla extract
  • 1/3 cup chopped dark chocolate or dark chocolate chips*

Instruction

  • Add all ingredients EXCEPT the chocolate to a food processor or high speed blender, and process on high and/or pulse, stopping to scrape the sides as needed, until a thick creamy mixture forms. This might take several minutes (or not) depending on the type of blender or food processor you're using.
  • Once you have a thick, creamy, fully combined mixture, stir in chopped chocolate or chocolate chips, then chill for at least an hour for an extra thick, creamy texture. Serve with fruit as a dip, or spread on your favorite breads, muffins, crackers or cookies! Store covered in the refrigerator for up to 5 days. Enjoy!
