Ingredients
The following ingredients have 4 Servings
- 2 med over-ripe bananas (mashed)
- 2 large eggs
- 1/4 cup organic coconut sugar
- 1/4 cup coconut oil (melted)
- 1/2 tsp pure vanilla extract
- 1 1/2 cups blanched almond flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup Enjoy Life chocolate chips (or homemade paleo chocolate chunks*)
Instruction
- Preheat your oven to 350 degrees and line an 8 x 8" baking dish with parchment paper along the bottom and sides
- In a large bowl, whisk together the mashed bananas and 2 eggs.
- Add the coconut sugar, coconut oil, and vanilla and continue to mix until smooth.
- Stir in the almond flour, baking soda and salt and mix until fully combined.
- Last, stir in the chocolate chips or chunks. Transfer the mixture into the prepared baking dish and bake for 25 minutes, or until it is set and lightly browned along the outer edges.
- Let cool completely before cutting into squares to serve. Enjoy!
