Ingredients

The following ingredients have 12 Servings
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1 cup mashed ripe banana
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 10 ounces mini chocolate chips

Instruction

  • Preheat oven to 350 degrees F. Line a muffin pan with paper liners.
  • Whisk together flour, baking powder, baking soda, and salt in medium mixing bowl; set aside.
  • Whisk together oil and sugar together in a large mixing bowl. Whisk in banana, egg, vanilla, then milk until well combined.
  • Mix dry ingredients into the oil and sugar mixture until almost combined. Reserve about 1/4 cup of the chocolate chips, then mix in remaining chocolate chips into batter.
  • Scoop batter evenly into paper-lined pan filling cups about 2/3 full. Sprinkle reserved chocolate chips on top of batter.
  • Bake muffins at 350 degrees F for about 20-25 minutes or until golden brown around the edges. Cool slightly, then remove from pan and cool on a wire rack.
