  • 5 1/4 oz granulated sugar ((3/4 cup))
  • 1 egg (at room temperature)

  • 4 oz semi-sweet chocolate (finely chopped)
  • 17 oz all-purpose flour ((3 3/4 cups))
  • 1 1/2 oz unsweetened cocoa powder ((1/2 cup))
  • 1 TBSP baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cups buttermilk (at room temperature)
  • 1 quart grapeseed or vegetable oil (for frying)
  • 2 oz unsalted butter
  • 2 TBSP milk
  • 2 tsp light corn syrup
  • 1 tsp vanilla extract
  • 2 oz semi-sweet chocolate (finely chopped)
  • 4 oz powdered sugar ((1 cup), well-sifted )
