Ingredients

The following ingredients have 4 Servings
  • 1 cup rice (I used basmati)
  • 2 cups water
  • 1/3 cup frozen corn (unthawed)
  • 2 chipotle peppers in adobo sauce (diced)
  • 1-2 tbsp. adobo sauce (from chipotle pepper can, to taste)
  • salt (to taste (optional))

Instruction

  • Add first 5 ingredients to a medium pan over high heat. Bring to a boil, cover and reduce heat to low. Simmer until rice absorbs all of the water (approx. 10-12 minutes).
  • Fluff rice with a fork, add salt (if using), and serve.
