Ingredients
The following ingredients have 4 Servings
- 1 pound ground chicken
- 1 small onion (diced)
- 2 chipotle peppers in adobo sauce (diced)
- 2 cloves garlic (minced)
- 2 limes
- 1 bunch cilantro (chopped)
- 1 head of butter leaf lettuce (or your favorite kind)
- 1 jalapeno (seeded & minced (optional))
Instruction
- Drizzle a little bit of olive oil in a large skillet & heat to medium/high. Pop in 1 pound of ground chicken. I buy boneless skinless chicken thighs and grind them up myself in the food processor - but you can buy it already ground too.
- Stir the ground chicken, breaking it all up. Add in one small onion diced & 2 chipotle peppers (diced). Drizzle in a little of the sauce it comes in too if you like it spicy like I do.
- Let the mixture cook until the chicken is lightly browned & cooked through. Stir in 1 diced & seeded jalapeno pepper (optional), 2 cloves of minced garlic, and the juice from one lime. Allow to cook 2 additional minutes, then remove from the heat.
- Divide the mixture between your pieces of lettuce. Garnish with cilantro, & squeeze a little extra lime juice on top. Serve.
