Ingredients
The following ingredients have 8 Servings
- 2 14.5 ounce cans Black Beans
- ½ cup Breadcrumbs
- 1/4 cup Grated White Onion
- ½ cup Whole corn kernels
- 1 large Egg
- 3 tablespoons Chipotles in Adobo
- 1 teaspoon Salt
- 1 teaspoon Chili powder
- 1/2 teaspoon Ground cumin
- 1/2 teaspoon Garlic powder
- ½ teaspoon Pepper
- 1/4 teaspoon Smoked paprika
Instruction
- Rinse and drain the black beans.
- Spread black beans out on a baking sheet and bake at 325 degrees F for 15 minutes to remove some of the moisture from the beans.
- Measure out ½ cup of beans and set aside. Place the rest of the beans in a large bowl and use a fork to mash them up.
- Add the breadcrumbs, grated onion, corn, egg, chipotles in adobo, salt, chili powder, ground cumin, garlic powder, pepper, and smoked paprika to the beans and mix the ingredients together thoroughly.
- Form the bean mixture into 4 equal patties.
- Skillet Instructions: Heat 1 tablespoon of olive oil in a skillet over medium high heat. Cook patties for 5 minutes on each side.
- Oven Instructions: Place the patties on a baking sheet and spray with cooking spray or brush with olive oil. Bake at 350 degrees F for 15 minutes.
