Ingredients

The following ingredients have 5 Servings
  • 8 chicken thighs ((bone in, skin on))
  • 2 limes (juiced (about 1/4 cup))
  • 3 teaspoons chipotle chili powder
  • 1/2 teaspoon salt
  • 4 tablespoons butter

Instruction

  • Heat oven to 425 degrees. Lightly grease a 9x13 baking dish with non stick cooking spray.
  • Lay out the chicken thighs in the prepared pan, skin-side up. Squeeze the lime juice all over the meat.
  • Combine the spices in a small bowl, sprinkle generously all over the meat.
  • Divide the butter into 8 pieces. Place a piece onto each thigh.
  • Bake for about 40-45 minutes, basting every 15 minutes with the juices in the pan.
  • Broil the last few minutes to really crisp up the skin. Watch closely. Remove from oven, rest for about 5 minutes and enjoy!
