The following ingredients have 5 Servings
- 8 chicken thighs ((bone in, skin on))
- 2 limes (juiced (about 1/4 cup))
- 3 teaspoons chipotle chili powder
- 1/2 teaspoon salt
- 4 tablespoons butter
Instruction
- Heat oven to 425 degrees. Lightly grease a 9x13 baking dish with non stick cooking spray.
- Lay out the chicken thighs in the prepared pan, skin-side up. Squeeze the lime juice all over the meat.
- Combine the spices in a small bowl, sprinkle generously all over the meat.
- Divide the butter into 8 pieces. Place a piece onto each thigh.
- Bake for about 40-45 minutes, basting every 15 minutes with the juices in the pan.
- Broil the last few minutes to really crisp up the skin. Watch closely. Remove from oven, rest for about 5 minutes and enjoy!
