Ingredients

The following ingredients have 4 Servings
  • ¼ cup fresh squeezed orange juice
  • 1 tsp orange zest
  • 2 tbsp white wine vinegar
  • 2 tbsp soy sauce
  • 1 tsp sriracha
  • 2 cloves garlic (crushed)
  • ¼ tsp ground ginger
  • ¼ cup brown sugar
  • 1 lb salmon (sliced into 2 fillets)
  • 1 red bell pepper (sliced)
  • 1 cup carrots (sliced diagonally)
  • 1 cup sugar snap peas
  • 1 cup broccoli florets
  • 4 cloves garlic (sliced)
  • 1 cup onion (sliced)

Instruction

  • Preheat the oven to 400°F.
  • Combine the first 8 ingredients in a small bowl to make the orange sauce.
  • Place the salmon in two large foil baskets on a baking sheet.
  • Scatter the bell pepper, carrots, peas, broccoli, garlic and onion around each piece of salmon.
  • Brush half of the orange sauce on the salmon and over the veggies.
  • Reserve the remaining orange sauce for later.
  • Place in the oven and bake for 10 minutes.
  • Remove from the oven, stir the vegetables, then brush the remaining orange sauce on the salmon and over the vegetables.
  • Place back into the oven for an additional 7-10 minutes.
