Ingredients
The following ingredients have 4 Servings
- ¼ cup fresh squeezed orange juice
- 1 tsp orange zest
- 2 tbsp white wine vinegar
- 2 tbsp soy sauce
- 1 tsp sriracha
- 2 cloves garlic (crushed)
- ¼ tsp ground ginger
- ¼ cup brown sugar
- 1 lb salmon (sliced into 2 fillets)
- 1 red bell pepper (sliced)
- 1 cup carrots (sliced diagonally)
- 1 cup sugar snap peas
- 1 cup broccoli florets
- 4 cloves garlic (sliced)
- 1 cup onion (sliced)
Instruction
- Preheat the oven to 400°F.
- Combine the first 8 ingredients in a small bowl to make the orange sauce.
- Place the salmon in two large foil baskets on a baking sheet.
- Scatter the bell pepper, carrots, peas, broccoli, garlic and onion around each piece of salmon.
- Brush half of the orange sauce on the salmon and over the veggies.
- Reserve the remaining orange sauce for later.
- Place in the oven and bake for 10 minutes.
- Remove from the oven, stir the vegetables, then brush the remaining orange sauce on the salmon and over the vegetables.
- Place back into the oven for an additional 7-10 minutes.
