Ingredients
The following ingredients have 5 Servings
- 5 pound(s) picnic ham (pork shoulder) or larger
- 3-4 tablespoon(s) coconut oil
- BRAISING STOCK:
- 1 - white onion, sliced
- 1/2 - green pepper, sliced
- 1/2 tablespoon(s) ground ginger
- 1 teaspoon(s) red pepper flakes, soaked
- 1 tablespoon(s) garlic powder
- 1 teaspoon(s) peanut butter, creamy
- 1/2 teaspoon(s) nutmeg
- ADDITIONAL INGREDIENTS:
- 1/4 cup(s) honey
- 1 cup(s) soy sauce
- - splash of rice wine (or white wine)
- 2 cup(s) water
Instruction
- Put coconut oil in a container and microwave for a few seconds to melt. (Coconut oil melts at a very low temperature so it will only take 5 to 10 seconds.)
- Massage pork with some of the coconut oil.
- In a frying pan, add the rest of the coconut oil. Fry meat for 4 minutes on each side. Remove meat and place into the slow cooker, fat side up.
- In the same frying pan, add the braising stock ingredients in with the remaining oil. Simmer for a few minutes.
- Then add the remainder of ingredients and warm for 1 or 2 minutes.
- Pour over the meat in the slow cooker. Cover and cook on high for 5-6 hours (or 8-10 hours on low). Baste 2 or 3 times during cooking.
- Sans Crock Pot, you could also cook this in a roasting pan in a 325-350 oven for the same amount of time.
