Ingredients

The following ingredients have 4 Servings
  • 6 pound whole roaster chicken
  • 1 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 2 cloves minced garlic
  • 1/4 teaspoon crushed red pepper
  • 1/3 cup white vinegar
  • 2 tablespoon extra virgin olive oil
  • 1 cup chicken broth
  • Kosher Salt
  • Black Pepper

Instruction

  • Preheat oven to 350 degrees F.
  • Rinse and pat dry the chicken and place in a roasting pan; then season with salt and pepper to your liking.
  • Combine the parsley, cilantro, garlic, pepper, vinegar and oil in a mini food processor and pulse until it is a sauce-like consistency. Brush the mixture over the entire chicken using a basting brush; then add the liquid to the bottom of the pan.
  • Place the pan in the oven and roast until the chicken is cooked through with a minimum internal temperature of 165 degrees F (I prefer ours at 180 degrees F); approximately 1 1/2 to 2 hours. Allow chicken to rest 10 minutes before carving.
