Ingredients

The following ingredients have 5 Servings
  • 1 pound fresh or frozen Chinese egg noodles
  • 1 tablespoon toasted sesame oil
  • 1 cup English cucumber (peeled, seeded, and sliced into sticks)
  • 1/4 cup chopped roasted peanuts (optional)
  • 2 tablespoons Chinese sesame paste or tahini
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon smooth peanut butter
  • 1 tablespoon granulated sugar
  • 1 tablespoon ginger (peeled and minced)
  • 1 teaspoon garlic (minced)
  • 2 teaspoons chili garlic sauce

Instruction

  • Cook noodles according to directions on the package (about 5 minutes in boiling water).
  • Drain and transfer to a large bowl. Add sesame oil and toss well.
  • Whisk all the ingredients for the sauce in a bowl and add to the noodles. Toss until noodles are
  • evenly coated.
  • Top with cucumber and/or peanuts and serve.
