Ingredients
The following ingredients have 5 Servings
- 1 pound fresh or frozen Chinese egg noodles
- 1 tablespoon toasted sesame oil
- 1 cup English cucumber (peeled, seeded, and sliced into sticks)
- 1/4 cup chopped roasted peanuts (optional)
- 2 tablespoons Chinese sesame paste or tahini
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon smooth peanut butter
- 1 tablespoon granulated sugar
- 1 tablespoon ginger (peeled and minced)
- 1 teaspoon garlic (minced)
- 2 teaspoons chili garlic sauce
Instruction
- Cook noodles according to directions on the package (about 5 minutes in boiling water).
- Drain and transfer to a large bowl. Add sesame oil and toss well.
- Whisk all the ingredients for the sauce in a bowl and add to the noodles. Toss until noodles are
- evenly coated.
- Top with cucumber and/or peanuts and serve.
