Ingredients
The following ingredients have 6 Servings
- PORK
- 5 pound(s) pork loin roast
- 1/4 cup(s) bourbon
- 2 teaspoon(s) liquid smoke
- 8-10 clove(s) garlic
- 1/4 cup(s) water
- 1 teaspoon(s) salt
- VERDE SAUCE
- 20 - tomatillo
- 1 - yellow onion-large
- 7-8 clove(s) garlic
- 4 - jalapeño peppers
- 3 - limes-juiced
- 1 teaspoon(s) salt
- 1 bunch(es) cilantro, fresh
Instruction
- Make Sauce a day ahead and refrigerate until ready for use
- Put all sauce ingredients in food processor and blend until smooth.
- Rub Pork with salt, add next 4 ingredients and place in crock pot for 6-8 hours. I have a hi-lo setting on my crockpot that automatically kicks from hi to lo after 2 hours. If yours does not just use lo for the full 8 hours.
- When pork is cooked remove from crock pot and shred, dump all fat and liquid from crock pot and return shredded pork.
- Pour raw Sauce in crock pot and cook on high for 2-3 more hours.
- Serve with tortilla’s and any sides you choose.
