Ingredients

The following ingredients have 6 Servings
  • PORK
  • 5 pound(s) pork loin roast
  • 1/4 cup(s) bourbon
  • 2 teaspoon(s) liquid smoke
  • 8-10 clove(s) garlic
  • 1/4 cup(s) water
  • 1 teaspoon(s) salt
  • VERDE SAUCE
  • 20 - tomatillo
  • 1 - yellow onion-large
  • 7-8 clove(s) garlic
  • 4 - jalapeño peppers
  • 3 - limes-juiced
  • 1 teaspoon(s) salt
  • 1 bunch(es) cilantro, fresh

Instruction

  • Make Sauce a day ahead and refrigerate until ready for use
  • Put all sauce ingredients in food processor and blend until smooth.
  • Rub Pork with salt, add next 4 ingredients and place in crock pot for 6-8 hours. I have a hi-lo setting on my crockpot that automatically kicks from hi to lo after 2 hours. If yours does not just use lo for the full 8 hours.
  • When pork is cooked remove from crock pot and shred, dump all fat and liquid from crock pot and return shredded pork.
  • Pour raw Sauce in crock pot and cook on high for 2-3 more hours.
  • Serve with tortilla’s and any sides you choose.
