Ingredients

The following ingredients have 4 Servings
  • 2 lbs beef stew meat
  • 28 oz red enchilada sauce ((divided))
  • 7 oz diced green chiles
  • 1 tsp beef bouillon
  • 1 cup refried beans
  • 8 large flour tortillas
  • 1 cup shredded cheddar cheese

Instruction

  • Add the stew meat, about 2.5 cups of enchilada sauce, green chiles, and beef bouillon to the bottom of a slow cooker.
  • Cover the slow cooker with the lid and let it cook on low for 7 to 8 hours.
  • Shred the meat slightly after it's done cooking.
