Ingredients

The following ingredients have 4 Servings
  • 4 chicken breasts (boneless, skinless)
  • 1 cup chile sauce of your choice
  • 1 tablespoon vegetable oil
  • 2 cups of snow peas (, thinly sliced)
  • 2 green onions (, thinly sliced)
  • 1-2 cups bean sprouts
  • 1/2 cup mint leaves
  • 1/2 cup cilantro leaves

Instruction

  • Preheat the oven to 425. Place chicken on a baking sheet. Combine 1/2 cup of the chile sauce and the vegetable oil and pour over the chicken. Roast for 20-25 minutes or until cooked through. Remove from oven and set aside.
  • Place the snow peas, green onions, bean sprouts, mint leaves, and cilantro leaves in a bowl. Pour over the rest of the chile sauce and toss to combine.
  • Divide the salad mixture between four plates. Slice the chicken and serve with the salad.
