Ingredients

The following ingredients have 2 Servings
  • 1/4 jar tomato sauce (about 6 ounces)
  • 2 spicy pork meatballs
  • broken up (or any leftover meat or veggies you have lying around)
  • 3 eggs
  • 2 handfuls broken tortilla chips
  • Sour cream
  • Salsa
  • Hot sauce
  • Cilantro

Instruction

  • Heat the sauce in 10-inch nonstick sauté pan over a medium-high flame
  • Add the eggs, meat and chips to the pan and cook, stirring constantly until the eggs set, about 3 minutes
  • Transfer to a plate and garnish with sour cream, salsa, hot sauce and cilantro
