Ingredients
The following ingredients have 9 Servings
- 1 15oz. cans chickpeas, drained and rinsed
- 1 English cucumber (chopped)
- ½ cup purple onion (diced)
- ¾ cup crumbled feta cheese
- 3 cups chilled (cooked quinoa)
- ⅓ cup freshly chopped parsley
- ½ cup extra virgin olive oil
- ⅓ cup red wine vinegar
- 1 tbsp lemon juice
- 1 tsp sugar
- ½ tsp Italian Seasoning
- ¼ tsp salt
- ¼ tsp black pepper
Instruction
- Combine the chickpeas, cucumber, onion, feta, quinoa and parsley in a large bowl.
- Combine the dressing ingredients in a small mason jar and shake with the lid on until combined. Pour dressing over salad and toss. Keep chilled until ready to enjoy!
