Ingredients

The following ingredients have 9 Servings
  • 1 15oz. cans chickpeas, drained and rinsed
  • 1 English cucumber (chopped)
  • ½ cup purple onion (diced)
  • ¾ cup crumbled feta cheese
  • 3 cups chilled (cooked quinoa)
  • ⅓ cup freshly chopped parsley
  • ½ cup extra virgin olive oil
  • ⅓ cup red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp sugar
  • ½ tsp Italian Seasoning
  • ¼ tsp salt
  • ¼ tsp black pepper

Instruction

  • Combine the chickpeas, cucumber, onion, feta, quinoa and parsley in a large bowl.
  • Combine the dressing ingredients in a small mason jar and shake with the lid on until combined. Pour dressing over salad and toss. Keep chilled until ready to enjoy!
