The following ingredients have 4 Servings
- 1 tablespoon olive oil
- ¼ cup chopped onions
- 1 clove garlic (, minced)
- 1 teaspoon curry powder
- ⅛ teaspoon ground ginger
- ¼ teaspoon kosher salt
- ½ cup vegetable broth
- ¾ cup canned coconut milk
- ½ tablespoon honey
- 1 (15-ounce) can chickpeas (, drained and rinsed)
- 1 cup cooked rice
Instruction
- Heat the oil in a 10-inch skillet over medium heat. Add the onions and cook for 1 to 2 minutes, until the onions soften, stirring occasionally.
- Add the garlic, curry powder, ginger, and salt and cook, stirring frequently for 1 minute.
- Pour in vegetable broth, coconut milk, and honey and bring to a boil.
- Add the chickpeas, reduce the heat to medium-low and simmer, stirring occasionally until the sauce thickens, about 10 minutes.
- Serve over rice.
