Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon olive oil
  • ¼ cup chopped onions
  • 1 clove garlic (, minced)
  • 1 teaspoon curry powder
  • ⅛ teaspoon ground ginger
  • ¼ teaspoon kosher salt
  • ½ cup vegetable broth
  • ¾ cup canned coconut milk
  • ½ tablespoon honey
  • 1 (15-ounce) can chickpeas (, drained and rinsed)
  • 1 cup cooked rice

Instruction

  • Heat the oil in a 10-inch skillet over medium heat. Add the onions and cook for 1 to 2 minutes, until the onions soften, stirring occasionally.
  • Add the garlic, curry powder, ginger, and salt and cook, stirring frequently for 1 minute.
  • Pour in vegetable broth, coconut milk, and honey and bring to a boil.
  • Add the chickpeas, reduce the heat to medium-low and simmer, stirring occasionally until the sauce thickens, about 10 minutes.
  • Serve over rice.
