  • 1/2 teaspoon maple syrup (or honey)
  • 1/4 teaspoon salt
  • 3 cups thinly chopped purple cabbage
  • 1 cup thinly sliced red pepper
  • 1 cup grated carrots
  • 1/4 cup cilantro leaves
  • 2 teaspoons olive or vegetable oil
  • 1 16 ounce container extra firm tofu, patted dry and cut into cubes
  • 1 tablespoon tamari (or soy sauce)
  • 1 15 ounce can chickpeas, drained and rinsed
  • 1/3 cup peanut sauce (store-bought or homemade)
  • 8-10 corn tortillas
  • Chopped peanuts for topping (if desired)
