- 1 tablespoon rice wine vinegar
- 1/2 teaspoon maple syrup (or honey)
- 1/4 teaspoon salt
- 3 cups thinly chopped purple cabbage
- 1 cup thinly sliced red pepper
- 1 cup grated carrots
- 1/4 cup cilantro leaves
- 2 teaspoons olive or vegetable oil
- 1 16 ounce container extra firm tofu, patted dry and cut into cubes
- 1 tablespoon tamari (or soy sauce)
- 1 15 ounce can chickpeas, drained and rinsed
- 1/3 cup peanut sauce (store-bought or homemade)
- 8-10 corn tortillas
- Chopped peanuts for topping (if desired)
