Ingredients

The following ingredients have 6 Servings
  • 6 pieces (~2 lb) boneless skinless chicken breasts
  • 1 Tbsp e.v. olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 2 cups (~8 oz) fresh or frozen blueberries
  • 1/4 cup (~2 oz) raisins
  • 1 1/2 Tbsp white wine vinegar
  • 2 tsp peeled & minced ginger
  • pinch salt
  • 1/4 tsp ground cinnamon
  • 1/4 tsp crushed red pepper flakes (more if you like it spicy)
  • pinch ground cloves
  • 1 Tbsp agave (optional if blueberries are not sweet enough)

Instruction

  • Preheat a grill to medium high heat (~400F).
  • Lightly rub chicken with olive oil and sprinkle with salt, pepper, and oregano.  Cook covered~ 6 minutes per side or until  internal temperature reaches 165F and juices run clear.
  • Make the Chutney.  Place all chutney ingredients in a small pan, bring to medium heat, and cook covered until warm (~ 3-5 minutes)
  • Serve blueberry chutney over chicken and add sea salt to taste.  Delicious with salad or with green beans & tomatoes.  Happy Eating!  Beckie
