Ingredients
The following ingredients have 6 Servings
- 6 pieces (~2 lb) boneless skinless chicken breasts
- 1 Tbsp e.v. olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano
- 2 cups (~8 oz) fresh or frozen blueberries
- 1/4 cup (~2 oz) raisins
- 1 1/2 Tbsp white wine vinegar
- 2 tsp peeled & minced ginger
- pinch salt
- 1/4 tsp ground cinnamon
- 1/4 tsp crushed red pepper flakes (more if you like it spicy)
- pinch ground cloves
- 1 Tbsp agave (optional if blueberries are not sweet enough)
Instruction
- Preheat a grill to medium high heat (~400F).
- Lightly rub chicken with olive oil and sprinkle with salt, pepper, and oregano. Cook covered~ 6 minutes per side or until internal temperature reaches 165F and juices run clear.
- Make the Chutney. Place all chutney ingredients in a small pan, bring to medium heat, and cook covered until warm (~ 3-5 minutes)
- Serve blueberry chutney over chicken and add sea salt to taste. Delicious with salad or with green beans & tomatoes. Happy Eating! Beckie
