Ingredients
The following ingredients have 6 Servings
- 1.5 lb skinless chicken breasts (cut into chunks 675g)
- 1 tsp salt
- 3 tbsp lemon juice
- 2 tbsp fresh ginger, peeled and grated (do not use powdered ginger!)
- 3 cloves garlic minced
- 1/2 cup natural yoghurt (use full fat coconut milk for dairy free)
- 2 tsp ground cumin
- 1 tsp paprika
- 1 tsp garam masala
- 1/2 tsp coriander
- ½ tsp cayenne pepper
- 4 tbsp olive oil
- 1/2 cup onion (finely sliced)
- 1 tbsp fresh ginger ( peeled and finely grated)
- 4 cloved garlic cloves (crushed)
- 1 tbsp ground coriander
- 1 tsp turmeric
- 1 tsp chilli powder
- 2 tsp paprika
- 1/2 cup yoghurt
- 1 cup crushed tomatoes
- 1 cup gluten free chicken broth
- ¼ tsp garam masala
- 1/3 cup cilantro leaves (to garnish)
Instruction
- Cut the chicken into 1 inch sized chunks and place in a bowl or ziplock bag for marinating.
- Add the salt and lemon juice and let the chicken sit in that for 30 minutes in the fridge.
- Finely chop or puree the fresh ginger and garlic together in a blender.
- To make the Chicken Tikka Marinade simply add the pureed fresh ginger, garlic, yoghurt and spices and mix well, then add it to the chicken pieces and stir until the chicken pieces are well coated.Marinade for 6 hours or overnight.
