Ingredients

The following ingredients have 4 Servings
  • 2lbs skin-on, bone-in chicken thighs
  • 2 tablespoon tamarind chutney
  • 1 cup olive oil
  • 1 bunch of parsley
  • 4 cloves of garlic
  • 1 red chili pepper
  • Salt to taste

Instruction

  • Combine all the ingredients, except the chicken, in a food processor. Process it until the consistency of a paste.
  • Transfer the marinade to a resealable plastic bag and add the chicken, tossing it around so it gets coated with the marinade. Seal the bag and marinate the chicken in the fridge overnight.
  • Preheat your oven at 375F degrees for at least 15 minutes.
  • Remove the chicken from the marinade and transfer to a baking dish, skin side up.
  • Bring it to the oven for 30 minutes or until the chicken is cooked and the skin is brown and crispy.
