Ingredients
The following ingredients have 4 Servings
- 2lbs skin-on, bone-in chicken thighs
- 2 tablespoon tamarind chutney
- 1 cup olive oil
- 1 bunch of parsley
- 4 cloves of garlic
- 1 red chili pepper
- Salt to taste
Instruction
- Combine all the ingredients, except the chicken, in a food processor. Process it until the consistency of a paste.
- Transfer the marinade to a resealable plastic bag and add the chicken, tossing it around so it gets coated with the marinade. Seal the bag and marinate the chicken in the fridge overnight.
- Preheat your oven at 375F degrees for at least 15 minutes.
- Remove the chicken from the marinade and transfer to a baking dish, skin side up.
- Bring it to the oven for 30 minutes or until the chicken is cooked and the skin is brown and crispy.
