Ingredients

The following ingredients have 4 Servings
  • 2 cups dried breadcrumbs
  • 2 tbs lemon rind, finely grated
  • 2 tbs fresh flat-leaf parsley finely chopped
  • 2 garlic cloves crushed
  • 4 chicken breast fillets
  • 1/3 cup plain flour
  • 1 egg lightly beaten
  • 2 tbs milk
  • 2 tbs olive oil

Instruction

  • Combine breadcrumbs, lemon rind, parsley, garlic, salt and pepper in a medium sized bowl.
  • Fillet chicken into schnitzels. Toss chicken in flour, shake away excess. Dip chicken in combined egg and milk, then in crumbs, pressing on lightly.
  • Heat oil in a large, non-stick pan. Cook schnitzels over medium heat until golden and cooked through.
  • Season schnitzels with salt and pepper, serve with lemon wedges and salad or vegetables.
