Ingredients
The following ingredients have 4 Servings
- 2 cups dried breadcrumbs
- 2 tbs lemon rind, finely grated
- 2 tbs fresh flat-leaf parsley finely chopped
- 2 garlic cloves crushed
- 4 chicken breast fillets
- 1/3 cup plain flour
- 1 egg lightly beaten
- 2 tbs milk
- 2 tbs olive oil
Instruction
- Combine breadcrumbs, lemon rind, parsley, garlic, salt and pepper in a medium sized bowl.
- Fillet chicken into schnitzels. Toss chicken in flour, shake away excess. Dip chicken in combined egg and milk, then in crumbs, pressing on lightly.
- Heat oil in a large, non-stick pan. Cook schnitzels over medium heat until golden and cooked through.
- Season schnitzels with salt and pepper, serve with lemon wedges and salad or vegetables.
