Ingredients

The following ingredients have 4 Servings
  • 4 tbsp all-purpose flour
  • 2 tbsp cornstarch
  • 1 egg white
  • 2 tbsp dijon mustard
  • 1/2 cup bread crumbs
  • 1 lb chicken breasts (cutlets or filleted)
  • 1 tbsp olive oil

Instruction

  • Whisk 2 tbsp of flour and the cornstarch together in one shallow bowl
  • In a second bowl, whisk the egg white and Dijon mustard
  • In a third shallow bowl combine the bread crumbs and the remaining 2 tbsp of flour
  • Dredge each piece of chicken in each bowl starting with the flour and cornstarch
  • Shake the excess off and dip in the mustard mixture. Let any extra drip off and coat generously with the bread crumb mixture
  • Heat the olive oil in a large skillet over medium heat
  • Add the chicken and cook for about 5-6 minutes per side
  • The chicken should be golden brown and cooked through
  • Remove the chicken from the heat and serve warm with your favorite sides
