Ingredients
The following ingredients have 4 Servings
- 4 tbsp all-purpose flour
- 2 tbsp cornstarch
- 1 egg white
- 2 tbsp dijon mustard
- 1/2 cup bread crumbs
- 1 lb chicken breasts (cutlets or filleted)
- 1 tbsp olive oil
Instruction
- Whisk 2 tbsp of flour and the cornstarch together in one shallow bowl
- In a second bowl, whisk the egg white and Dijon mustard
- In a third shallow bowl combine the bread crumbs and the remaining 2 tbsp of flour
- Dredge each piece of chicken in each bowl starting with the flour and cornstarch
- Shake the excess off and dip in the mustard mixture. Let any extra drip off and coat generously with the bread crumb mixture
- Heat the olive oil in a large skillet over medium heat
- Add the chicken and cook for about 5-6 minutes per side
- The chicken should be golden brown and cooked through
- Remove the chicken from the heat and serve warm with your favorite sides
