Ingredients

The following ingredients have 2 Servings
  • 2 chicken breast fillet halved skin off
  • 2 egg
  • 1 garlic clove finely chopped
  • 1/2 tsp chilli powder
  • 1 pinch salt and pepper
  • 1/2 cup dried breadcrumbs
  • 1 tbs unsalted butter

Instruction

  • Whisk eggs in a medium bowl until the yolks have broken up.
  • Add the garlic, chilli, salt and pepper and whisk again.
  • Add the chicken to the egg mix, coat well and allow to stand for 5 minutes.
  • Coat the chicken in a thin layer of breadcrumbs.
  • Heat a fry pan on medium heat.
  • Add enough butter to the pan to cover the base with a thin layer once melted. Heat until slightly bubbling.
  • Fry the chicken for two minutes, add extra butter to the pan and turn chicken over. Turn the chicken a few times until golden brown in colour.
