Ingredients

The following ingredients have 4 Servings
  • 3 cups rotisserie chicken breast meat ((See Note 1))
  • 1/2 cup celery (diced (2-3 ribs))
  • 3 green onions (diced fine (See Note 2))
  • 3/4 cup mayonnaise
  • 1 tbsp dijon mustard (See Note 3)
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp fresh dill (chopped)
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Instruction

  • In a medium sized bowl whisk together the mayonnaise, Dijon mustard, lemon juice, parsley, dill, salt and pepper.
  • Cut the chicken into small cubes and add to the mixing bowl. Add celery, green onions and toss to mix thoroughly. Season to taste.
  • Chill or serve immediately over salad greens, in a lettuce wrap, stuffed in a bell pepper, on bread for sandwiches or with crackers.
