Ingredients

The following ingredients have 2 Servings
  • 1 1/2 cups grilled chicken, cubed
  • 1/4 cup mayonnaise
  • 1 celery rib, diced
  • 2 tablespoons blue cheese crumbles
  • 2 tablespoons chopped walnuts
  • 1/2 tablespoon chopped parsley
  • 1 ounce dried cranberries
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 6-8 butter lettuce leaves

Instruction

  • Combine all of the ingredients, except the butter lettuce, in a medium-sized bowl and stir until well combined. If making ahead of time, cover the bowl and store in the fridge until ready to serve. Fill each lettuce leaf with a scoop of chicken salad.
  • If you make this to take to work/school/wherever you’re going be sure to keep the lettuce leaves and salad separate until you’re ready to eat otherwise the lettuce will lose its crispness!
