Ingredients

The following ingredients have 4 Servings
  • 1 Tbsp olive oil
  • 2 medium boneless, skinless chicken breast
  • 4 tsp taco seasoning mix
  • 1/2 cup plain Greek yogurt
  • 1 medium avocado
  • 1 cup fresh cilantro
  • 2 cloves garlic
  • 2 limes (juiced)
  • 1 jalapeño (seeded)
  • 2 cups quinoa (cooked )
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 (15 oz) can corn (drained and rinsed)
  • 1/4 cup red onion (finely diced)
  • 1 medium avocado (sliced)
  • 2 limes

Instruction

  • Heat olive oil in sauté pan over medium-high heat. Add chicken breasts and sprinkle taco seasoning over top of both breasts. 
  • Let cook for about 5 minutes per side, or until fully cooked through. Transfer to plate to let cool slightly before shredding.
