Ingredients
The following ingredients have 4 Servings
- 1 Tbsp olive oil
- 2 medium boneless, skinless chicken breast
- 4 tsp taco seasoning mix
- 1/2 cup plain Greek yogurt
- 1 medium avocado
- 1 cup fresh cilantro
- 2 cloves garlic
- 2 limes (juiced)
- 1 jalapeño (seeded)
- 2 cups quinoa (cooked )
- 1 (15 oz) can black beans (drained and rinsed)
- 1 (15 oz) can corn (drained and rinsed)
- 1/4 cup red onion (finely diced)
- 1 medium avocado (sliced)
- 2 limes
Instruction
- Heat olive oil in sauté pan over medium-high heat. Add chicken breasts and sprinkle taco seasoning over top of both breasts.
- Let cook for about 5 minutes per side, or until fully cooked through. Transfer to plate to let cool slightly before shredding.
