The following ingredients have 36 Servings
  • 1 pound ground chicken
  • 1 tablespoon canola or vegetable oil (plus more for frying dumplings)
  • 2 tablespoons minced ginger
  • 2 tablespoons minced garlic
  • 1 1/2 cups finely chopped Napa cabbage (white and green parts separated (see note))
  • 1/3 cup chopped scallions
  • 1/2 teaspoon kosher salt
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 32 to 40 round dumpling wrappers (around 3.5" diameter)
  • water for cooking the dumplings
  • 1/3 cup soy sauce
  • 1/3 cup Zhenjiang vinegar (can sub with rice vinegar)
  • 1 stalk of scallions (sliced)
  • 1 clove garlic (sliced)
  • 1/2- inch piece of ginger (sliced)
  • 1/2 teaspoon sesame oil
